ROASTED PEPPER AND TOMATO SOUP WITH CAROLINA REAPER AND BLUEBERRY HOT SAUCE

Warm up with this rich and comforting Roasted Pepper & Tomato Soup, elevated with the bold flavour of Carolina Reaper and Blueberry hot sauce

Why This Hot Sauce

Our Carolina Reaper & Blueberry combines the intense heat of Carolina Reaper chilis with the natural sweetness of blueberries and apples for a uniquely balanced flavour. It adds depth and complexity to soups, stews, roasted vegetables, grilled meats and cheese dishes

Ingredients (for 2-3 servings):

  • 1 clove of garlic, chopped
  • 1 head of red onion, chopped
  • 200 gr of chopped tomatoes, from a can
  • 2-3 roma tomatoes, chopped
  • 2 red bell peppers, roasted, peeled and deseeded
  • 1 l of vegetable stock
  • Salt and black pepper to taste
  • 1 tsp of dried oregano
  • 1 tbsp of sugar
  • 3 tbsp of Carolina Reaper and Blueberry hot sauce

To Finish

  • Fresh thyme leaves
  • Crusty bread for serving (optional)


Recipe Tips:

  • Roasting the peppers beforehand enhances their natural sweetness and depth of flavor

Method:

  1. Add the garlic, onion, chopped tomatoes, Roma tomatoes, roasted peppers, vegetable stock, thyme, oregano, sugar, salt and black pepper to a large saucepan.
  2. Bring to a gentle simmer over medium heat and cook for around 30 minutes until the vegetables are soft.
  3. Blend until completely smooth using a blender or stick blender.
  4. Stir through the Carolina Reaper and Blueberry hot sauce until fully combined.
  5. Serve hot, garnished with fresh thyme
