SPICY MEXICAN RICE WITH PULLED PORK AND CHIPOTLE AND PINEAPPLE HOT SAUCE

 

Perfect for a quick weeknight dinner or a satisfying lunch, this one-pan recipe is a delicious way to enjoy authentic Mexican-inspired flavors

Why This Hot Sauce

Our Chipotle & Pineapple hot sauce combines naturally smoked chipotle chilis with the sweetness of pineapple for a perfectly balanced flavor that complements rice, pulled pork, tacos, burritos, grilled chicken and BBQ dishes

Ingredients:

  • 1 tbsp of oil
  • 1 shallot, diced
  • 50 gr of chopped tomatoes, from a can
  • 3 tbsp of Chipotle and Pineapple hot sauce
  • Salt and black pepper to taste
  • 100 gr of cooked rice
  • 50 gr of pulled pork

To Finish

  • Fresh coriander, chopped
  • Lime wedges


Recipe Tips:

  • Day-old rice works best for a fluffy texture and better flavor absorption

Method:

  1. In a hot pan add oil and start by cooking the shallots.
  2. After 2 minutes, add in the pulled pork, chopped tomatoes and Chipotle and Pineapple hot sauce.
  3. Season with salt and black pepper
  4. Cook for 2 minutes and then add in the cooked rice
  5. Cook for another 2 minutes and serve
